Dinner at Sunset

This meal was unbelievably satisfying. It felt like we were eating at a beach restaurant in the Florida Keys or something. The combination of flavors between the lentils, kale, lemon, and chicken made this a really fun meal to eat, and it was perfectly filling. I used the recipe from Everyday Food and followed it pretty much exactly, except I used a rotisserie chicken. Even if I had cooked chicken from scratch, this meal only took 15 minutes to prepare – and that was including prep time! We added some fresh bread from Whole Foods, and Bota Box wine on the side. This is one of those meals you think about and look forward to enjoying again….maybe next time with a few friends 🙂

    Do you think this be weird with jerk seasoning on it?

      It would probably be really good with jerk seasoning on it! Maybe a little weird. But probably good.
