Oats and Berries

I have always been a breakfast person. I used to wake up early in the morning, excited to get out of bed just to make coffee and munch on some toast. The only problem is, I have had a really hard time finding a breakfast that keeps me full longer than 1-2 hours. Don’t get me wrong, I love snacking and will take pretty much any opportunity to eat, but sometimes I need my breakfast to sustain me until lunchtime. That’s where this delicious treat comes in. Beautiful in it’s appearance, perfect in it’s simplicity, complex in it’s ability to keep me full for hours. It’s my new favorite.

 

Mixed Oats and Grains with Strawberries { Serves 2-3 }

2 1/2 cups water
1/4 tsp salt
3/4 cup rolled oats
1/4 cup mixed grain hot cereal 

Toppings:
3-4 strawberries, washed, hulled and sliced
1/4 cup high protein granola
1/4 cup whole milk (or whatever your milk of choice is)
honey, brown sugar, or any sweetener you like

In a medium saucepan, heat water and salt until boiling. Add oats and grains. Stir well, and bring to a boil. Reduce heat to low, cover and simmer for 15-20 minutes, stirring occasionally, until most of the liquid is absorbed. Serve immediately! I top mine with the ingredients listed above, but I change out the fruit for whatever we have on hand. Yesterday it was peaches, sometimes it’s bananas and walnuts…get creative! This is a perfect breakfast blank slate.
